OP Overnight Oats

Updated: Nov 1, 2020

These oats are OP (Over Power). In 5 minutes I have 5 meals ready to grab. Fiber & Omega rich. More protein than my prior breakfast: veggie & egg whites. OP for sure!

I can not stress enough how versatile this recipe can be. It could be breakfast or a random snack. You can get as creative as you want with it. Change your ingredients with the season. Enjoy cool or warm.

I once took these with me on an international business trip. Five containers, each with only the dry ingredients. Once in my hotel room, I popped open my shelf sustainable plant based milk and had a nourishing breakfast all week long.

Steps & Ingredients

1. Take 5 small containers (about 2 cups each in size) & in each mix together dry items:

  • 1/2 c. rolled oats

  • 1 tbsp chia seeds

  • 1 tbsp cinnamon

2. Then add plant based milk to each container.

  • ~ 1/2 c. plant based milk (per container)

3. Top with whatever floats your boat:

  • 2 tbsp pumpkin seeds

  • Berries of choice (I use frozen since they are cheaper & will thaw in frig)

Stick all 5 containers in the frig. You can grab and eat throughout the upcoming week. Enjoy warm or cool.

Get creative! Mix up ingredients and toppings. Below are some ideas.
  • Pumpkin Pie: Blend some pumpkin puree into milk. Top with pumpkin pie spice & cacao nibs.

  • Apple Pie: Add diced apples & pecans. Drizzle with maple syrup.

  • Almond Joy: Add diced almonds & shredded coconut. Top with chocolate chips & maple syrup.
